Casa Julián erretegia Tolosa


1950eko hamarkadan Julian Rivasek Casa Julián-en ateak zabaldu zituen txikiteroen taska gisa. Aldi berean eta pixkanaka, parrillan jakiak erretzeko zuen zaletasunak eta eskualdean eros zitekeen haragi bikainak zirela eta jatetxea erretegi bihurtzen joan zen, nahiz eta bere irudi zaharrari eutsi, oraindik orain arte, bere eskaintza klasikoari gauza berriak gehitzen ere asmatu dute.

Casa Juliánen buru, azken urteetan Matias Gorrotxategi izan da, bertako “parrillerorik” onenetakoa bihurtu dena. Gaur bere semeek daramate gidaritza.

Menua aldaezina da oinarrian: Nafarroako kukuluz, iberikoz edo zainzuriz osatutako sarrerak, ondoren txuleta parrillan errea, Casa Julianen bakarrik dastatu daitekeen bezala eta piper konfitatuak. Postrean, Casa Julián-erako sortu ziren jada oso ezagunak diren Eceizako Teila eta zigarrotxoak. Baina esan bezala, garaiaren arabera, gaur egun, beste produkturen bat beste ere gehitu ahal zaio bertako gastronomia eskaintzari.
