Dans les années cinquante, Julian Rivas a ouvert l’endroit au public comme une taverne txikitero. Dans le même temps et progressivement, le goût pour les grillades grillées et la magnifique viande que l’on pouvait acheter sur le marché aux bestiaux de Tolosa, dérive de la conversion de l’établissement en grillades, tout en conservant son ancienne image, même à ce jour.

À la tête de la Casa Julián, Matías Gorrotxategi est devenu l’un des meilleurs « grilleurs » du pays.

Le menu est inaltérable: entrées composées de cours de laitue “cogollos”de Tudela, jambon ibérique ou asperges de Navarre, puis le steak rôti, comme seul à Casa Julian peut être dégusté, accompagné de poivrons piquillos de Lodosa confits.
