En los años cincuenta Julian Rivas abrió el local al público como tasca de txikitero. Al tiempo y progresivamente, el gusto por el asado a la parrilla y la magnífica carne que en la comarca se podía adquirir, deriva en la reconversión del establecimiento en asador, aunque manteniendo su imagen añeja, aún hasta la actualidad.

Al frente de Casa Julián, Matías Gorrotxategi se ha convertido en uno de los mejores “parrilleros” del país.

El menú es inalterable: entrantes compuestos de cogollos, ibéricos o espárragos navarros, a continuación el chuletón asado, como sólo en Casa Julian se puede degustar, acompañado por pimientos confitados.
