Chistorra, black pudding and mondeju

In Tolosaldea it is common, especially in autumn and winter, to find black puddings and mondejus, especially during the bean season. In many places you can find sausages made in the traditional way.

Black pudding contains pork fat and blood, onion, leek, salt, oregano, parsley and pepper. Mondeju, on the other hand, is made with sheep’s casing and fat, leek, onion, paprika and egg. Barriola butcher’s shop has also created, for the first time, ox mondeju.

As for txistorra, it is a common dish, especially on Fat Thursday during Carnival. It is available all year round. As well as the traditional txistorra, they also make truffle txistorra, Ibarra chili pepper txistorra, steak txistorra or black garlic txistorra, offering a wide variety of different types of txistorra. You will only find these special txistorra sausages at Barriola butcher’s shop in Ibarra.
