Below we explain how to cook Tolosa beans with their sacraments.
Ingredients for 8 people:
- 1 kg. of Tolosa beans.
- 3 liters of water
- 5 tablespoons of olive oil
- Salt
The sacraments:
- Vegetable black pudding
- Cabbage
- Pickled chillies from Ibarra
If the bean is from the year, it will not be necessary to soak it. So the first step will be to put the beans in a saucepan with three liters of cold water. Add the oil and put it on high heat until it boils.
At that moment we lower the heat maintaining a very soft boil and cook them for three hours. If you need water, we will always add cold.
Once they are done, we will add the salt, we will let it boil for a minute and we will turn off the heat to let them rest and thus, the broth settles.
For the cabbage
Cook the cabbage in plenty of water for 8 minutes, so that it maintains its color and flavor. Drain it and dress it with a touch of olive oil.
For the black pudding:
Cook the vegetable black pudding for an hour over low heat. If you also choose mondeju, chorizo or pork rib, do it in the same way.
Presentation of the dish
Serve the Tolosa beans in a clay container. On the other hand, present on the one hand the cabbage and the black pudding. In another container, the pickled Ibarra chillies.

Beans can be purchased every Saturday at the Tolosa Market, directly from the producer farmhouses. There are also shops specializing in local products and preparations, such as Barriola Harategia and Altuna Harategia.
