“Mondeju” and Wine Fair

Mondeju, a gastronomic treasure that emerges from the heart of Amezketa, is a reflection of the special connection between our town and the mountains. It is not just a food, but the history of Aralar shepherding, the memory of our farmhouses and part of the living legacy that has been passed down from generation to generation. Mondeju brings to mind the sweetest moments of our lives: the moments when we get together as a family, the dishes shared among friends, and together with the first cold of autumn, the incomparable aroma that fills the houses.

The history of mondeju begins when the shepherds of the town prepare the sheep for the winter. This dish was created by using old and sterile sheep, being the basis of a menu totally related to sheep. The housewives prepared it with care, in silence but with pride, and so it has come down to our days. Thanks to the work carried out by our ancestors, this tradition endures and the mondeju keeps us linked to our past, nourishing the relationship with our land.
