A Tolosaldea és habitual, sobretot a la tardor i a l’hivern, trobar botifarrons i mondejus, tot coincidint amb l’època de la mongeta. A molts llocs es poden trobar embotits elaborats de manera artesanal.

El botifarró conté greix i sang de porc, ceba, porro, sal, orenga, julivert i pebre. El mondeju, en canvi, s’elabora amb tripa i greix d’ovella, porro, ceba, pimentó i ou. A la carnisseria Barriola també s’han creat, per primer cop, mondejus de bou.

Pel que fa a la xistorra, és habitual, sobretot el Jueves Gordo de Carnaval. Està disponible durant tot l’any. A més de la xistorra tradicional, també es fa la de trufa, la de bitxos d’Ibarra, la de txuleta o la d’all negre. Per tant, la oferta és molt variada.
